"The legend says that when you see flashes in the sky on rainy nights, the Imbabura volcano makes the Cotacachi volcano fall in love. Imbabura is a man, and Cotacachi is a woman," Edison narrates as he drives us to the chocolate factory in Cayambe at 2,830 metres in the middle of the Ecuadorian Andes.
We have left Quito behind, and as soon as we cross the equator line, we arrive at the factory in an area full of history, heritage and a magnificent landscape.
It's been a while since we saw each other, but our talk is more constant when we perfect the technique to obtain the aroma and elevate our chocolate to an outstanding level. Alejandro, Ruth and Margarita are team members that have been crafting our chocolate for years in that beautiful factory in the heart of the Andes. Their spontaneous smiles show they love their work and perhaps our brief visit.
Then we arrive at the Imbabura volcano at the foot of the majestic San Pablo Lake. The Imbabura seduces not only Cotacachi but all of us who come there. His presence captivates us, as well as his colours, his air, his breeze. And I think how privileged we are to craft our chocolate in this part of the world where nature, talent, history and soul converge.
